Coconut Filling Recipe
- 1 6-ounce can evaporated milk
- 2/3 cup sugar
- 1/4 cup butter or margarine
- 1 slightly beaten egg
- dash of salt
- 1 teaspoon vanilla
- 1 3 1/2-ounce can flaked coconut
- 1/2 cup chopped pecans
- In a saucepan combine milk, sugar, butter, egg and salt. Cook and stir over medium heat til mixture thickens and begins to boil, 12 - 15 minutes.
- Remove from heat, add vanilla, coconut, and pecans.
- Let cool thoroughly.
