For the cake I tried a different way to make Red Velvet Cake. I used White Cake Mix and instead of using 1 Cup of Water I used 1/2 cup of water & 1/2 cup of Butter Milk. But with the buttermilk we tried a different type we used 2 Tablespoons of Cultured Buttermilk. Mixed with water and added this to the white cake mix, normal 1/2 cup of oil, 3 eggs, 2 Table spoons of Red Food Coloring & 2 Table Spoons of Cocoa Powder, & Mixed it with our Hand mixer, then poured the cake batter into 2-13x9 cake pans sprayed with cooking spray & wax paper & 2-"9" Round Cakes.

I tried baking these cake on the High setting on the oven, So I preheated the oven to 325 Instead of 350 and wow what a difference! We actually didn't have a mount on the cakes. I baked the cakes for 30 minutes for the Rounds and around 35 minutes for the 2-13x9 cakes.

(Butter Cream Icing)
We put 2 cups of Butter ,2 Cups of Shortening, 2-1/2 tablespoons of vanilla Extract & 16 Cups of Powdered Sugar to make 4 batches of Buttercream Icing.
I am very proud of this cake!

This was for a middle school principal who loves to go to the beach. Things were pretty stressful at the beginning of the school year and her friend wanted to do something special for her 50th birthday. She is a chocolate lover so I made a chocolate cake layered with chocolate ganache and chocolate chocolate chip mousse. There were four layers of cake and three layers of filling. It was 5 1/2 inches high when it was done. I frosted it with butercream. The palm trees are piped on in buttercream. The sunset was painted onto the buttercream with colored gel and clear vanilla. The sand was a combination of graham crackers, light and dark brown sugar, and edible glitter. After putting on the blue waves I added in some white to make them look as though they were crashing on the beach. There were two towels, a set of his and her flip flops, a beer bottle, and a martini glass all made with fondat and gumpaste. I used a C motion to pipe some more blue waves up the side of the cake. They loved the cake and it truly felt like a beach get away.

This is a summer cake that I made as a surprise for my family that live a while away from me. They really liked it as well!

First I made the cake mixture but had to make double to make it a bigger size. I then put all the mixture in one big tin and cooked it 'til it was golden brown. I left it for a couple of hours so that the cake would be cold before I decorated it, or the icing would melt.

I then divided the cake in two and covered one side with buttercream and the other with raspberry jam. After, I sandwiched the two cakes together and covered the whole thing in a light spread of buttercream. I then made a wavy horizontal line on the cake and covered the first half in brown sugar so it looks like sand and the other half i covered in blue regalice icing and then blue piping icing.

After this I made the little decorations. I made 3 sandcastles out of yellow regalice icing, one fish out of yellow regalice icing and one out of red. I made the starfish out of red icing, a beach towel out of red and yellow regalice icing and I stuck an umbrella into the cake which I thought gave it a finishing touch.
